Wednesday Wellness and meet my new date.

Today Parker and I are flying to Salt Lake City and then driving up to Rexburg. He moves into his apartment tomorrow and then we get to go to the new student orientation, go shopping with Kam to stock up their kitchens a bit, go out to dinner with Zach and Angela, and spend time with my sister and her family and my parents. Then I fly home on Monday, which is also the start of the first of my two crazy semesters. Which shall hereafter be known as Crazy Semester #1 (thankfully there will only be two in this series!).

It will be a fun, but bittersweet, six days.

The Wednesday Wellness part of this post will come later. But first, I'd like you to meet my new date. We will be spending some quality time together today while we're waiting in the airports and during our flights, and over the next few days during any periods of down time I might find (like, you know, when I wake up on Georgia time even though I went to bed really late on Idaho time because I was up talking and spending time with family. I hate when that happens because I come home from my "vacation" way more tired than when I left):


Anyways.

Yep.

I have a date with Frankenstein. This is one of the required books for my Brit Lit class, so I thought I'd try and get a head start into Crazy Semester #1 by reading it before the semester starts.  For me to get the "deep" read that's required for proper analyzation and then (hopefully) A-grade writing in these classes, I have to read things more than once. I've never been a read-quickly-then-write-an-A-grade-paper kind of girl. I need to read. Then re-read. Then think. A lot. Then write. Then re-write. Then re-write some more. Etc. Etc. Etc.

I really did not totally procrastinate in this objective; I've started it several times and gotten about 1/3 of the way through, then "real" life has taken over, and I've forgotten where I was and started over again. A couple of times. But from what I've read (and re-read) so far, I kinda' like it. I read the SparkNotes to get a general overview of the book, and I think I have some kind of depressing reading ahead of me. And a not-happy ending.

But read, I must. Which is what I really should be doing instead of writing this post.

Oh well.

Now for the Wednesday Wellness part of this post.

Kailen found this recipe on Pinterest and we L-O-V-E it! Yes, it's a brownie. But what I love about it is that you can conquer that brownie craving without having to make an entire pan of brownies which will then stare at you and sit on your counter begging you to eat "just one" and you may or may not eat more than "just one" because it's one of Those Days and because you don't want to send some to your friends because they're trying to be "good" too and you don't want to sabotage their attempt at "goodness." And this problem is compounded when you're the only one at home during most of the day.

So.

Here you go:

Brownie in a Mug:

1/4 c sugar
1/4 c flour
2 T cocoa
Pinch of salt
2 T canola oil
3 T water

Add dry ingredients, then oil and water. Mix. Microwave for 1 min 40 sec. Let cool. It's really good with ice cream on top. Of course.

Now, I had eaten one of these before I knew it had 2 tablespoons (252 calories!) of oil in it. So I played with it a bit the other day and tried to come up with a "healthier" version, but just couldn't make it work. Although the version above is probably comparable to eating 2 brownies, and it does have heart-healthy cocoa powder and canola oil in it (oh, the rationalizations!).
