Here's one of my favorite soup recipes:
Weight Watchers One Point Hearty Chili
10 oz extra lean ground turkey breast (I use hamburger and drain it and rinse it very well)
1 medium onion, diced
2 28 oz cans diced tomatoes
2 medium zucchini, diced
2 medium yellow squash, diced
1 15 oz can black beans, rinsed and drained
2 15 oz cans fat-free, reduced sodium beef broth
4 celery stalks, diced
2 green bell peppers, diced
1 1-1/4 oz package dry chili seasoning
Spray large nonstick skillet with nonstick spray and sauté turkey with onion until browned, about 5 minutes. (I cook all my hamburger – I buy it in 5+ pound sizes – drain it well, then divide it into around a pound sizes, put it in Ziploc bags and freeze. When I make this chili, I skip the sautéing step and just add the onion with everything else). Transfer turkey/onion mixture to a large soup pot and add tomatoes, zucchini, squash, beans, broth, celery, green peppers, and chili seasoning. Bring to a simmer over medium heat. Continue simmering until all the vegetables are tender, about 30 minutes. Serving size = 1 cup. Nutritional information: Calories: 76, fat: 0g, sodium: 270mg, fiber: 3g, protein: 7g.
It is very yummy and very healthy!
