Here are some of my most favorite healthy recipes, and they are both kid-approved:

Brownies/Cupcakes (from Carla Bennett)

1 pkg chocolate cake mix
15 oz can pumpkin
¼ c water
1 cup semi-sweet chocolate chips

Spray pans w/ Pam spray. Combine all ingredients and pour into mini muffin tin, cupcake pan or 9x13 pan.  Bake at 375 for 15 minutes or until done in center.  Makes 24 cupcakes or 48 mini muffins. Nutritional information: (without chocolate chips) 24 servings: calories-96, fat-2 grams, fiber-.75 grams)

I promise you'll never taste the pumpkin and they are so moist!

Better Bran Muffins (I can't remember where I got this recipe)

5 c whole wheat flour
5 t baking soda
2 t salt
1   20 oz package raisin bran cereal
1 c honey
½ c oil
8 egg whites, beaten
1 quart buttermilk

Mix dry ingredients, then drizzle honey over the top to coat.  Mix oil, egg whites, and buttermilk into the dry ingredients.  Blend well.  Bake in paper muffin cup lined muffin tins, or use a nonstick cooking spray on muffin tins.  Fill cups ½ to ¾ full of batter. Bake at 400 degrees for 15 minutes.  Recipe makes approximately 6 dozen muffins.  Batter will keep 6 weeks in the refrigerator.  Muffins freeze well.  (Calories: 92, fat 2 grams, fiber, 2 grams)
